Have you ever eaten buckeye-candy?



This delicious buckeye-candy recipe is a bit different from any other buckeye recipe. It is a basic peanut butter candy that is rolled in melted butterscotch and semisweet chocolate chips. It delivers a bit of a crunch from rice krispie cereal and is fun to make. I hope you enjoy this recipe for buckeyes. You could place this recipe with your other favorite rice krispie recipes. If your not a big fan of butterscotch, then use more chocolate chips, or omit the butterscotch all together and use only chocolate.

Ingredients:


  • 2- cups peanut butter
  • 1/2 cup butter
  • 1 lb. powdered sugar
  • 3 cups Rice Krispies Cereal
  • 2 cups butterscotch chips
  • 2 cups chocolate chips

Directions:


  • In a small bowl melt togrther the peanut butter and butter.
  • In a large bowl combine powdered sugar and rice krispie cereal.
  • Pour the melted peanut butter and butter mixture over the cereal mixture.
  • With your hands, blend ingredients all together and then form into 1/2 in. balls.
  • Chill until firm.
  • Melt chips in a double boiler or microwave.
Tips for melting chocolate here!

  • Line a baking sheet with wax paper.
  • Remove balls from refrigerator.
  • With a toothpick, dip and twist the bottom half of each ball into the melted chocolate. Let the excess chocolate drip off before placing your finished candy onto the baking sheet.
  • Chill until firm.


This buckeye recipe yields about 4-5 dozen buckeyes, depending on the size that you make them. For a variation, you could also dip these in melted white chocolate! Yum!
