Chocolate-almond-biscotti-recipe.

This chocolate-almond-biscotti-recipe was given to me by my friend Marcy. She made this biscotti recipe for a bake sale and they were delicious! By using a boxed cake mix, you save time and still end up with delicious results.
They also host a wonderful aroma and almondy flavor.

Ingredients

  • 1 (18.25 oz.) chocolate cake mix
  • 1/2 cup butter or margarine melted
  • 1/4 cup chocolate syrup
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 teaspoon almond extract
  • 1/2 cup semisweet chocolate chips(you may also use miniature chips)
  • 1/2 cup slivered almonds
  • 1(10 oz.) package white chocolate chips
  • 2 Tablespoons shortening

Directions

  • Preheat oven to 350°F.
  • Combine flour, butter, chocolate syrup, extracts, eggs and dry cake mix into a large mixing bowl. Mix well.
  • Stir in chocolate chips and almonds into your biscotti batter.
  • Now, divide your dough in half.

  • On ungreased baking sheet, shape your dough into two 12-in. X 2-in. logs.

  • Tip: I always use place my dough in plastic wrap to form my logs.) This saves on messy hands. Just be sure to remove the plastic wrap before placing your logs into the oven.

  • Bake at 350°F for 30-35 min.
  • Let cool for 15 minutes.
  • Transfer to a cutting board and with a serrated edge knife cut diagonally into 1/2 in. slices.
  • Tip: I always push my knife straight down through the biscotti instead of using a sawing motion. It gives a better shape to your biscotti and doesn't tear it into lots of crumbs.

  • Place the biscotti cut side down onto ungreased baking sheets.
  • Bake for 10-15 minutes or until firm.
  • Remove to wire racks to cool.

  • In a small heavy saucepan combine shortening and white chocolate chips. Melt over low heat.
  • Drizzle your white chocolate mixture over your cooled biscotti; let stand until hardened.
  • Store your biscotti in an airtight container.

    Variation

If you want to omit the drizzling step and do something different with your chocolate-almond-biscotti-recipe; here is another decorative finish.

  • Chop additional almonds into small pieces.
  • Dip one side of your biscotti into yor melted white chocolate.
  • Dip your white-chocolate side of biscotti into the chopped almonds.
  • Place onto wax paper to harden.

This gives you a very decadent looking biscotti that is sure to please! This method will require a bit more white chocolate chips!

This chocolate-almond-biscotti-recipe makes great gifts, and can easily be put into a coffee mug and be packaged up nicely for gift-giving.
