About Genesee

Do you want some chocolate-chip-cookie-bars that are sure to please?

Chocolate-chip-cookie-bars are great for many reasons. The first is that they are delicious. The second is because they are easy to whip up and serve to a large crowd or unexpected guests. This recipe would also be considered a blondie. It is basically a chocolate chip cookie recipe that is baked in a pan rather than individually as a cookie. This recipe has a light colored crumb and is riddled with chocolate chips and walnuts. The result is a chewy and luscious cookie bar.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 tsp salt
  • 2 sticks unsalted butter, softened
  • 3/4 cups packed brown sugar
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans
  • 12 ozs. or 2 cups semi-sweet chocolate chips

Directions

  • Position a rack in the center of the oven level.
  • Preheat your oven to 350°
  • Butter and line a 10x15x1 inch jelly-roll pan with buttered parchment paper or foil
  • In a medium mixing bowl, stir together the flour, salt, and baking soda to mix.
  • In a mixing bowl with an electric mixer beat the butter and sugars together until well mixed.
  • Beat in the eggs; one at a time.
  • Mix in the vanilla extract.
  • Next, stir in the flour mixture into the butter mixture.
  • Stir in the chocolate chips and nuts.
  • Spread your batter into your pan and bake for about 30 minutes. ( Your batter will be a bit sticky!)
  • When done your blondies will be firm to the touch.
  • Remove your pan from the oven and place on a cooling rack. Let cool.
  • After your blondies are cool, invert it onto a cutting board and remove your paper or foil.
  • Cut your bars into 2 inch squares.

Storage

You may store your blondies in a plastic container or tin for consumption within a couple of days. If you plan to freeze them, individually wrap them and freeze in a air-tight plastic container.
