Thin, Crisp and Chewy Chocolate-Chip-Cookie-Recipe
What keeps a recipe in your box? This chocolate-chip-cookie-recipe is one of our family favorites. It has earned it's keep in my box among other chocolate chip recipes by it's bold presence of brown sugar and abundance of chocolate chips. When baked, these cookies will be flat, with crispy edges and chewy centers. The chocolate chips will poke through the thin buttery dough. When I first began baking this chocolate-chip-cookie-recipe I wasn't too sure that I was going to like it. The dough is a bit different than other cookie batters and I wasn't sure I liked how thin they were. That is, until I tasted them. They really are delicious! Very buttery and loaded with chocolate chips!
When you bake them, be sure to let them cool for at least 2 minutes before removing them from the baking sheet. This gives your thin cookie time to harden a bit, and finish baking. Also, be sure to remove them from your cookie sheet with a thin, wide metal spatula onto a cooling rack. Enjoy your delicious cookies.

Ingredients
- 1 3/4 cups bleached all purpose flour.
- 1/4 cup + 2 tsp. cake flour. (If you do not have cake flour, you may add this in additional all purpose flour. )The cake flour tenderizes the cookie giving the cookies a lightly carmelized flavor.
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 pound (2 sticks) unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 2/3 cup + 3 tablespoons light brown sugar
- 2/3 cup granulated sugar
- 1 1/4 teaspoons hot water
- 2 1/2 cups semisweet chocolate chips
Directions
- Preheat oven to 350°
- You may line your cookie sheets with kitchen parchment if you prefer.
- In a large bowl, use an electric mixer to cream the butter. Let the butter cream on low speed for about 3 minutes.
- Next, add the light brown sugar and white granulated sugar. Beat for 2 minutes.
- Add eggs one at a time, letting them beat into the mixture before adding the next one.
- Now, add your hot water and vanilla.
- In a small mixing bowl sift together your all-purpose cake flour, cake flour, salt and baking soda. If you do not have a sifter you may use a wire wisk to incorporate air into the flour mixture.
- Add this flour mixture (half at a time ) to your cookie batter and mix on low speed until the flour is all mixed in.
- Don't forget to scrape the sides of the bowls as you mix!
- When your batter is thoroughly mixed, stir in your chocolate chips.
- Using a tablespoon, spoon your cookie dough into mounds on to your cookie sheet. Space them 3 inches apart.
- You may garnish the tops of your cookies with additional chocolate chips if desired.
- In your preheated oven, bake the cookies for 13-14 minutes, until golden and set.
- Remove the cookies from the oven.
- Let the cookies cool on the cookie sheet for 1-2 minutes before removing to a wire rack.
- Store your cookies in an airtight container.
- Makes about 3 dozen cookies.
Variation
You may make your chocolate-chip-cookie-recipe a bit nutty by:
- adding 1 cup of your favorite nuts into your dough .
- Add these when you add your chocolate chips.
