Have you ever tasted chocolate-mint-brownies?


These chocolate-mint-brownies are quite an attraction at my dessert tables. We start with a substantial fudge brownie recipe and add Andes mints. Could there be a better combination?

This will easily become one of your favorite mint recipes. While you will be tempted to serve these in large squares, they are quite rich, so make your portions a bit smaller. Now, when everyone asks where you got them you can proudly say, "It's a homemade brownie recipe!" Just don't forget to mention where you got it, here at The-Chocolate-Spot! Chocolate Mint Brownies


Ingredients:


  • 1 cup unsweetened cocoa powder
  • 3 cups granulated sugar
  • 1 1/2 cups butter melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 boxes Andes chocolate covered mints.(4.67 ounces each) unwrapped


Directions:


  • Preheat oven to 350°F.
  • Line a 13 x 9 inch pan baking pan with aluminum foil (heavy duty)and grease or spray with non-stick cooking spray.
  • Combine melted butter and cocoa powder into a medium bowl and mix well. Set this aside.
  • Next, in a large mixing bowl, beat your eggs and sugar at medium speed. Do this until they get fluffy. This will take about 5 minutes.
  • Add your butter and cocoa mixture too your eggs and sugar.
  • Add your flour, salt and vanilla. Mix just until combined.
  • Now, Spread only half of your brownie batter into your prepared pan.
  • Place your Andes mints side by side in an even layer over your brownie batter.(Make sure that your mints cover your entire chocolate area!)
  • Spread your remaining chocolate batter evenly over top of the mints. (Please do this carefully!)
  • Bake in your oven for about 35 minutes.
  • Let completely cool in your pan before serving.
  • Enjoy!


Note:This recipe will make around 2 dozen brownies.
