About Genesee

Have you ever tasted triple chocolate-peanut-clusters?

These chocolate-peanut-clusters are out of this world. They will very easily be chosen over most homemade candy recipes. These chocolate covered nuts are coated with a combination of three different chocolates to produce an extremely creamy, delicious and irresistable candy.

These clusters will out sell most single chocolate candies. This is a great recipe because you can use it for lots of different types of candy. You can make chocolate covered nuts of different varieties. Such as cashews, pecans, almonds and so on. Or you can make your own blends and create your own chocolate candy recipes.

You may be unable to keep up with the sales demand of these chocolate-peanut-clusters. Good Luck!

Triple Chocolate Peanut Clusters

Ingredients

  • 1-12 oz. package semi-sweet chocolate chips(Hershey)
  • 1-12-oz. package milk chocolate chips(Nestle)
  • 32 ozs. or 2 pounds of finely chopped white chocolate(Bakers)(not white chips, unless they are pure white chocolate)
  • 1 24 oz. jar of dry-roasted unsalted peanuts

Directions:

  • In a double boiler or microwave safe bowl combine your three types of chocolate.
  • Melt your chocolate over low heat until it stirs smooth. (If using the microwave) Melt for 1 minute, stir then microwave again. Repeat this process until your chocolate stirs smooth.
  • Let cool for around 5 minutes.
  • While cooling, place a few sheets of wax paper onto baking sheets.
  • Stir in the peanuts.
  • Drop your clusters onto the wax paper with a tablespoon.
  • Let your candies completely cool before wrapping.
  • I always layer mine between layers of wax paper and then wrap them in plastic wrap so the they are airtight. You can also store them in plastic containers.
  • Refrigerate until you are ready to serve them.
  • You can make these peanut clusters 1 month ahead. Store them in the refrigerator.

Note: This recipe makes around 7 dozen clusters. You may half this recipe for a smaller batch. Have fun!
