This chocolate-zucchini-cake is a must try! Even if you or your loved ones are not zucchini lovers, this zucchini bread recipe is a great way to slip in an extra serving of this vegetable.
This easy chocolate cake can be very easily made into chocolate zucchini bread just by baking it in a loaf pan. (This is my favorite way to bake it!) It does not require a frosting, as it is absolutely delicious on it's own. This chocolate-zucchini-cake is great to make when you have all of those zucchini and not quite sure what to do with them.
I like to grate the zucchini and freeze them into bags, that way I have them when I want to bake. This chocolate-zucchini-bread also freezes well, so you can may several and freeze them for up to 2 months. I'm sure that this will become one of your favorite chocolate bread recipes.

TIP: When adding chocolate chips to cake and bread batters, one may find that sometimes they sink to the bottom of the pan and burn rather than dreamily floating throughout your dough.
You can remedy this by tossing your chocolate chips in about a 1/4 cup of flour before adding them to your batter. This will allow them to float instead of sinking. Good luck!
Ingredients:
- 3 cups lightly packed shredded zucchini
- 1 cup semi-sweet chocolate chips
- 2 cups granulated sugar
- 4 eggs
- 1 tsp vanilla
- 1/2 cup unsweetened Dutch process cocoa powder
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon ground all-spice
- 1 teaspoon baking powder
- 1/2 teaspoon ground nutmeg
- 1 teaspoon cinnamon
- 1 cup vegetable oil
Directions:
- Preheat oven to 350°F.
- Grease and line with kitchen parchment( two 9 X 5 in. loaf pans) or (2) 8-9 in. round cake pans.)
- In a medium bowl, whisk together cocoa powder, flour, baking soda, baking powder, nutmeg, salt, allspice, cinnamon and flour.
- In a large bowl with an electric mixer beat sugar and oil. Add eggs one at a time , beat well. Add vanilla. Add your zucchini and mix. Beat in your flour mixture. Beat only until batter is smooth. Gently stir in your chocolate chips and vanilla.
- Spread your batter into your pans . Bake them in your oven for 1 hour. A cake tester will come out clean when your chocolate-zucchini-cake is done.
- Let your pans cool on cooling racks for about 15 minutes.
- Invert pans and remove parchment, continue to let your chocolate zucchini bread or cakes cool on the cooling rack until cool.
