Do you want a quick and easy coffee-cake-recipe?


This coffee-cake-recipe is so quick and easy. The best part is they don't taste like it! They are very moist and delicious. The biscuits are flavored of coconut, nuts and brown sugar. They are topped off by cinnamon sugar and chocolate chips.

This is one of my favorite biscuit recipes that uses refrigerator biscuits. It's also very popular among my family and friends. These are best served hot from the oven, but are also good just at room temperature. My husband likes to take these to work with him and heat them up in the microwave and eats them with his lunch.

Coconut Coffee Cake


Ingredients:


  • 1 tablespoon granulated sugar + 1/4 teaspoon cinnamon (mixed together)
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup flaked coconut
  • 2/3 cup packed brown sugar
  • 1/2 cup chopped peanuts
  • 1/4 cup butter or margarine melted
  • 2 packages (7.5 ounces each) refrigerated biscuits(You may use buttermilk biscuits but regular are fine too!


Directions:


  • Preheat oven to 350°F.
  • Spray a 9 inch square pan with non-stick cooking spray.
  • In a medium bowl, combine brown sugar, nuts, butter,coconut and milk; stir well.
  • Spread 1/2 to 3/4 of the coconut mixture to the bottom of your pan. (The remaining mixture will go on top!)
  • Separate your biscuits and arrange them in a single layer over top of the coconut mixture in your pan.
  • Now, top your biscuits with the remaining coconut mixture.
  • Sprinkle the cinnamon sugar mixture all over the top of your biscuits.
  • Now you can sprinkle your chocolate chips over top of the cinnamon sugar.
  • Bake 20-25 minutes in your pre-heated oven, or until golden brown.
  • Cool for around 5 minutes, then serve warm.
