Have you ever tasted cranberry-white-chocolate-cookies?
Cranberry-white-chocolate-cookies are delicious. The crumb is soft and chewy with delicious chunks of cranberries and white chocolate. There is a slight flavor of oatmeal, and a crunch from walnuts. These cranberry cookies freeze very well. Depending on how big you make your cookies, this recipe will make 5 dozen or more. This recipe will nicely tuck into your recipe box with your other cranberry recipes. Enjoy!

Cranberry-white-chocolate-cookies.
Ingredients
- 4 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 cups butter softened
- 1 1/2 cups packed brown sugar
- 1/2 cup white sugar
- 2 (3.4 ounce) packages of instant vanilla pudding mix
- 4 eggs
- 2 teaspoons vanilla extract
- 2 cups white chocolate chips
(You may use chunks of chopped white chocolate or white baking chips that you find at your local grocery store.)
- 2 cups chopped walnuts(optional)
- 1 cup oatmeal
- 1 cup dried cranberries
Directions:
- Place your oven rack to the center of your oven.
- Preheat oven to 325°F.
(You could bake at 350°F., but since we are using white chocolate which scorches easily, it is better to lower the oven temperature.
- Whisk together your flour, oats, and baking soda, then set aside.
- In a large bowl with an electric mixer(or by hand if you don't have one). Cream together the butter, brown sugar, and white sugar.
- Beat in the instant pudding mix until blended.
- Stir in the eggs and vanilla.
- Blend in the flour mixture.
- Finally, stir in the white chocolate chips, nuts, and cranberries.
- Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
- Bake for 11-15 minutes in the preheated oven.
- Edges should be golden brown.
- Remove cookie from oven and allow to cool on baking sheet for two minutes.
- Remove cranberry-white-chocolate-cookies to cooling rack to finish cooling.
Storage: Your cranberry cookies may be stored in an air-tight container between layers of wax paper or kitchen parchment. When you are finished packing your cranberry cookies, if you are going to store them at room temperature, lay a piece of white bread in the top of the container before you seal it. The cookies will absorb the moisture from the bread and remain, fresher and softer longer! They will freeze for about 2-4 months.
