The process.

When the dried beans arrive to the various chocolate manufacturers they are brushed, cleaned and roasted. Roasting of the beans enhances their aroma and loosens their husks for an easier removal.

The next process in how-white-chocolate-is-made, is to crush the beans to remove their husks. This also exposes the insides of the beans called nibs. The nibs are what contains cocoa butter. Many varieties of beans are then ground together to form a paste.

This paste, is then put into a press to extract most of the cocoa butter. The fat-free solids called chocolate liquor can be used to make cocoa powder. They also can be combined with cocoa butter and other ingredients to produce other forms of chocolate.

To make white chocolate, cocoa butter is combined with sugar, milk solids, and flavoring. Every manufacturer uses a different recipe for it's white chocolate. No two are alike.
