If you want a great lime-cake recipe, here it is. It is low fat, very moist and a superb pound cake recipe. Who says low fat can't be delicious? With yogurt being a replacement for fat, this is one of my very favorite low fat recipes. Moist and delicious, this pound cake recipe is sure to please. A light lime glaze with a hint of white chocolate makes this lime-cake simply irresistible. I know your going to enjoy this recipe! Happy Baking!

Lime-Cake
Ingredients:
Pound Cake:
- 1 3/4 cups cake flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup non-fat yogurt
- 3/4 cup granulated sugar
- 2 Tablespoons canola oil
- 1 large egg
- 2 Tablespoons unsalted butter, melted
- 1 Tablespoon fresh lime juice
- 4 teaspoons grated lime zest
- 1/2 teaspoon lemon extract

Directions:
Cake:
- Position oven rack to center of oven.
- Preheat oven to 350°F.
- Spray an 8x8 pan with non-stick cooking spray.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In another medium bowl, whisk together yogurt, oil, sugar, butter, egg, lime juice, lime zest, and butter until mixed.
- Stir flour mixture into your yogurt mixture until flour is just moistened.
- Spoon or pour into your prepared pan.
- Place in your pre-heated oven and bake until golden, and a wooden toothpick inserted in the center comes out clean, 30-35 minutes.
- Completely cool cake in pan on wire rack before adding glaze.
Glaze:
- In a small bowl, stir together confectioner's sugar, lime juice, white chocolate, yogurt and lime zest until smooth.
- Spread over top of cooled cake.
- Let cake set, uncovered, until the glaze is set and dry to the touch.
- Then cut into 12 pieces.
- Warning: These delicious nibbles of pound cake, may trigger a feeding frenzy!
