How do you like your peanut-butter-bars?


While I love regular peanut-butter-bars, the flavor combination of peanut butter and chocolate are a divine blend. Of all the peanut butter recipes I have tried and tested. These are the absolute best! Riddled with chunks of bittersweet chocolate and pieces of peanut butter cups, you'll enter a euphoria never before encountered when biting into these luscious moist peanut-butter-bars. This recipe is simple to make and gives you the utmost results. I hope this recipe becomes a a favorite among your peanut butter cookie recipes.

Ingredients


  • 1 cup slightly heaping bleached all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 stick (8Tbs.) unsalted butter , softened
  • 1 cup light brown sugar, firmly packed
  • 2 large eggs
  • 1/2 cup smooth , creamy peanut butter
  • 1 tablespoon vegetable oil
  • 1 1/2 teaspoons vanilla
  • 6 ozs. bittersweet chocolate chunks, (If you buy a bar, cut into small chunks!)
  • 6 packages (4 packages for in your batter, 2 reserved for topping)(1.5 ozs. each) milk chocolate covered peanut butter cups, cut into chunks




Directions


  • Preheat oven to 350°.
  • Spray the inside of a 8.5 x 11 inch baking pan with non-stick cooking spray.
  • In a small bowl, whisk together the flour, baking soda, and salt.
  • In a large mixing bowl cream butter with and electric mixer.
  • Add the sugar and continue mixing.( Mix for about 3 minutes.)
  • Beat in the eggs on at a time.
  • Mix in peanut butter, vanilla, and oil.
  • Scrape the sides of your bowl to ensure all ingredients are mixed in well.
  • Mix in your flour mixture slowly, a spoon full at a time.
  • Slowly stir in your chocolate chunks and chopped peanut butter cups. (Don't forget that some of your peanut butter cups are for your topping!)
  • Scrape your thick batter into the pan and evenly spread.
  • With your spatula, smooth out the top of your batter.
  • Top your batter with your remaining two packages of chopped peanut butter cups.
  • Bake your peanut-butter-bars for 25-30 minutes, or until set.
  • Remove your pan from the oven and place onto a cooling rack to cool.
  • When cool; cut and enjoy your bars.
  • Store in an airtight container or tin.
  • Serve within 2 days.


Variation: You may add 1 cup of whole roasted peanuts. You can add these when stirring your chocolate chunks and chopped peanut butter cups to your batter.
