Have you ever made peanut-butter-chews?
Peanut-butter-chews are delicious. The base is made of honey bunches of oats cereal. When all ingredients combine they form homemade cereal bars. If you enjoy the taste of peanut butter and chocolate then you'll love this cereal bar recipe.
As I was forming the base to these peanut-butter-chews, I really did't think there were enough ingredients to cover the bottom of the 13 X 9 pan. What I did, is spray the flat bottom of a glass with non-stick cooking spray, and continued pressing the mixture until it covered the bottom of the pan. It takes a little time, but you will eventually have the bottom of your pan covered with your thin base.
This cereal bar recipe will give you 16 or more servings, depending on the size that you cut them. The bars are crisp, sweet, chewy and a bit habit forming. I hope you enjoy them!

Ingredients:
Base
- 3 tablespoons corn syrup
- 1/3 cup packed brown sugar
- 2 tablespoons butter
- 2 tablespoons chunky peanut butter (I use JIF)
- 2 cups Honey Bunches of Oats Cereal
Topping
- 5 squares of Baker's semi-sweet baking chocolate, chopped
- 1/3 cup chunky peanut butter
- 1/4 cup cocktail peanuts, chopped
Directions:
Base
- With foil, line a 13 x 9 inch pan and spray with non-stick cooking spray. (This will allow you to easily remove the bars, after cutting them.)
- In a large microwaveable bowl, combine brown sugar, corn syrup, 2 Tbsp. butter, and 2 Tbsp. peanut butter.
- Microwave on high for 2 minutes or until melted. Stir until smooth.
- Add cereal; stir to coat well.
- Press firmly into pan. (Remember, this will take a little elbow grease and you will end up with a nice , thin, base.)
Topping:
- In a small microwaveable bowl, combine chocolate and peanut butter.
- Microwave on high for 1-2 minutes or until it is melted and stirs smooth.
- Spread over your cereal base.
- Sprinkle your peanuts over top of the chocolate mixture.
- Refrigerate 1 hour until firm.
- Cut into bars or triangles.
- You may store your cereal bars on a air-tight container in refrigerator until ready to serve.
