Well, what-is-white-chocolate? White chocolate is a creamy and rich sweet that comes from the cacao bean. It is composed of sugar, cocoa butter, dry milk solids and flavorings such as vanilla. An emulsifier may also be added.
What are the FDA's standards for white chocolate?
Prior to the year 2004, there were not any standards for white chocolate. It was actually illegal to name it as such. It was to be labeled "white coating" or "white confection". However, in the year 2004, the FDA now defines white chocolate as being, at least 20% cocoa butter, 14% milk solids, and 3.5% milk fat.
In foreign countries such as Switzerland and Europe, they give white chocolate names such as "Blancor" or "Ivoire".
What white chocolate is not!

I like to call white chocolate "white gold". You can be
tricked into buying a fake white confection if you are not careful in reading the label.
Real white chocolate does not contain any vegetable fats.
Only "cocoa butter". If it does, it is a confectionary coating.
These confectionary coatings are called "candy melts" or "summer coatings".
These are made with sugar, hardened fats, and dry milk
solids. They can also come in pastel colors, they are used to
make inexpensive molded candies. Candy melts are often confused with white chocolate. Candy melts do not contain the
same flavor or texture of real white chocolate. They are also
known as artificial white chocolate.
Another way to to check if a product is white chocolate.
Candy melts are typically white. True white chocolate is in shades of ivory. Candy melts also do not have the aroma that white chocolate does. This is due to the lack of cocoa butter in the candy melts. They are also much less expensive than white chocolate.
White chocolate and allergies.
There are many people that are allergic chocolate, that are able to eat white chocolate. This is because white chocolate is absent from the fat-free cocoa solids found in regular chocolate.
White chocolate may also be preferred by to those with a
sensitivity to caffeine. The amount of caffeine found in
chocolate is less that in a cup of coffee. The amount of
caffeine found in white chocolate is even less. As, cocoa
butter contains only a trace amount.
