White-Chocolate


White-chocolate remains an unchartered area in the chocolate territory. I call it "white gold" because I enjoy eating it. (You will see me refer to this as "white gold" throughout my articles.) Many do not know what it is, how it is made, or where it comes from.

Melting this type of chocolate.


You must take extreme care when melting this chocolate. It contains high amounts of cocoa butter and milk fats that melt at different temperatures. Milk proteins also are sensitive to heat, so be sure to read the information in the melting chocolate link below!
